This salad has all the ingredients that I keep at home, 

Chickpeas, broccolini, rocket and orzo ( Kritaraki in Greek ) my favourite pasta which is great in salads, soups or chicken dishes. 

Snow peas are in season, or you can use snap peas, or whatever green you like! 

   

Ingredients: 

1 bunch broccolini- get a bunch that has more stems and less florets . Chop the florets off. ( cook the stems first chop into 1 cm rounds ) Cook florets separately as it takes less time to cook it 

1 packet snow peas – cook until crunchy and slice thinly 

1 can chickpeas – rinse 

4 spring onions thinly sliced 

1 cup orzo pasta 

2 handfuls of rocket 

2 cubes Meridith goat’s cheese and separate into small pieces with your fingers 

2 tbsp flaked almond, place in pan to slightly brown. 

  

After you have cooked the orzo add some olive oil and salt 

Mix all ingredients together 

  

Dressing 

I tbsp honey 

Squeeze juice of 1 lemon 

1/2 tsp salt 

1/2 c olive oil 

2 tsp Dijon mustard 

Shake altogether in a jar
