Remember this green soup?
I usually make it in autumn and winter to keep your immune system strong. Zucchini’s are high in vitamin C.
Ingredients
6 zucchinis
1 onion
1 pack of baby spinach leaves
2 tbsp butter
2 cups Chicken stock
1 cup of water
Sweat one chopped onion in 2 tablespoons of butter.
Add one pack of baby spinach or one bunch of English spinach and zucchinis to the chicken stock.
Add one cup of water and bring to the boil and simmer till vegetables are soft.
Add in the onions and butter.
Blend and add salt.
Enjoy!
